Eggplant Casserole Recipe
I would like to share with you a family summer recipe. For those of you who love eggplant you will love this recipe. You will need one small eggplant, peel it and cut crosswise into thin slices and dredge each slice with flour then brown in hot olive oil (1/2 cup). Drain. Then cook 1 package of #29 ziti for 6 minutes, drain and return to sauce pan. Blend in 8 ounces of ricotta cheese, 7 ounces of a total of 14 ounces of spaghetti sauce and 1.5 ounces of parmesean cheese. Cover bottom of baking dish with ziti and top with layer of eggplant. Add alternate layers of remaining ziti and eggplant unitl both are used. Pour the remaining 7 ounces of sauce and sprinkle with 1.5 ounces of parmesean cheese. Bake until brown, approx. 20 minutes. Let me know how it turns out.

June's Summer Checklist
Although bright, sunny days provide pleasure for millions of people, potential damage caused by overexposure to the sun is becoming more evident. I learned the hard way by spending to much time in the sun as a kid, so when I reached my 40's I discovered I had skin cancer, luckily for me it was the lowest form and was easily removed. Try to instill in your family how easy it is to get skin cancer and that not everyone is as lucky as I am. Here are some facts to take into consideration before you take that next trip to the park or beach.
Learn C.P.R.
80% of skin cancer occurs on the face, head and neck, in my case it was on my back.
Be generous with sunscreen on these parts of the body. Also, consider wearing a hat.
Sunstroke should be treated by cooling the person. Use cold water, ice or wrap the person in a wet sheet or towel. Seek medical attention.
Provide swimming lessons for children.
Watch children carefully. Often lifeguards are unable to observe every person on the beach or pool.
Equip pool with safety devices. Buoys, a lifesaving pole, a first aid kit and a list of emergency phone numbers are all a necessity.
Familiarize yourself with the different rules that apply to boating and other water sports.
Have a happy, fun and safe summer.

Selecting Your Style
Through my contacts with clients, I have found the one most challenging aspect of decorating for them is determining their style. Most people don't know what style they are or even know where to begin to determine a style. My job is to help them uncover which category of styles they belong. There are five styles:
Formal Traditional - refers to interior furnishings, finishes, and backgrounds from historical styles that are more refined. Think of the 18th or 19th centuries, a time of prosperity and the flourishment of the arts. These styles are; English designs of Queen Anne, Chippendale, Adam, Hepplewhite and Sheraton, Court French which is Louis XV, XVI and Empire and America's Federal.
Formal Modern - Employs modern furnishings, finishes, and backgrounds of elegance and sophistication. Styles such as; Art nouveau, Art Deco, Classic Modern and Post-Modern. International style furniture is formal and Modern Oriental.
Informal Provincial - Handcrafted, simple, casual and appearing unpretentious. It is cloistered, comfortable and rustic and incorporates furniture from several countries which have designs rooted from the past and exude charm and informality. Think of Colonial American, Medieval English, French Provincial, Spanish, Dutch, Swedish and German furnishings.
Informal Modern - Casual fabrics with matte finish, simple materials and unpretentious accessories. Also fun and funky. Plastic and disposable furniture are used. Scandinavian, Japanese, Italian and Craft Revival furnishings are used.
Eclectic - A mixing rather than a matching, but not hodge-podge. Furnishings are related in scale and have a common theme. This style is more daring and imaginative. Mixing Victorian with Modern.
